From the kitchen… freshly baked banana bread which sunk in the middle – any ideas why it would do that?

My banana bread sinks in the middle too sometimes – often I think it is baked because of the toothpick test, but it is just slightly under baked and it sinks – not big deal! It gets eaten just the same and I’m sure yours will be tasty too! Enjoyed your daybook!

The secret to good banana bread is to bake it at 300 F.
It will take longer, it depends on your bread pan size but it prevents the edges from getting over baked and the inside not completly done.
No matter what the recipe says, bake it at 300. Since quick breads don’t take yeast, it won’t affect the rise.
